The official term for a pizza maker is pizzaiola, but a more fitting title for Di Fara owner and pizza maker Dom, would be maestro. If you were fortunate enough to witness him at work it's a similar experience to that of an orchestra conductor or skilled painter, as he harmoniously pours his heart into the meticulous process of crafting the perfect pizza.
When you think of authentic New York style pizza, Di Fara has been cemented in the best of the best conversation, representing the quintessential New York slice. From the no frills interior to the sidewalk window just several feet from the deck oven, this joint has been pumping out top notch pies for over 50 years.
To achieve such a memorable experience, owner Dom DeMarco doesn't take any shortcuts. This requires not sacrificing the quality of ingredients for more profit, which most New York pizzerias are notorious for. Only using the finest tomatoes, cheese, olive oil and of course dedicating the physical labor of love, are just a few components that yield his remarkable pizza. Up until a couple of years ago, he was the one and only person to touch the oven.
